Mix semolina, salt, chili & ginger paste, oil, sugar, yogurt, & water. Add fruit salt and steam. Sauté mustard seeds, green chilies, & curry leaves in mustard oil & pour over dhokla.

Rice dhokla
Make batter with rice flour, yogurt, sugar, oil, & semolina. Add water, asafoetida, & lemon juice, & ferment overnight. Steam for 20 mins. Saute mustard seeds, & red pepper in oil. Add water, mix, pour over dhokla.

Chili cheese dhokla
Mix semolina, salt, sugar, oil, water, fruit salt, & yogurt. Pour half into a pan, add chilies and cheese. Add remaining batter & steam. Saute mustard seeds, red chilies, cumin, & curry leaves in oil, pour over dhokla.

Methi palak dhokla
Soak cowpeas overnight, blend with spinach, ginger-chili paste, fenugreek, oil, asafoetida, & salt. Add fruit salt, water, & mix well. Pour batter in greased plates, steam for 10 mins, & serve.

Oats rava dhokla
Mix oats, curd, semolina, salt, water, & green chili paste. Add spinach, water, fruit salt & mix. Pour the batter into a plate & steam for 10 minutes. Let it cool, cut & serve with green chutney.
