Mix together atta, water, salt, and boiled and mashed potatoes and knead into a stiff dough. Roll out puris and deep fry them in ghee until golden brown.

Palak puri
Blanch green chili and spinach, then grind them into a paste. Mix atta, oil, spinach paste, water, and salt and knead into a soft dough. Roll out puris and deep-fry.

Beetroot puri
Make dough with atta, ajwain, salt, pureed beetroot, oil, and water. Rub the dough with oil and keep aside. Roll out puris and deep-fry. Serve with curried potatoes and raita.

Gobi puri
Make regular puri dough. Make stuffing with grated cauliflower, chopped chilies, roasted peanuts, cumin seeds, salt, red chili powder, and coriander leaves. Stuff and roll out puris, and deep-fry.

Methi puri
Make dough with atta, red chili powder, asafoetida, carom seeds, salt, turmeric powder, dry methi, water, and oil. Make small balls, roll them into puris, and deep-fry.
