World Milk Day 2023: Recipes to celebrate this white goodness
Let's begin a brand new month on a milky note! June 1 is celebrated as World Milk Day every year since 2001 to honor and recognize the importance of milk as a global food. It also throws light on and raises awareness about the dairy sectors across the world and the several livelihoods dependent on them. Make this day special by trying these recipes.
Rasmalai
Add lemon juice to boiled milk to make chenna (curd). Drain the excess water and crumble the chenna in a muslin cloth, then roll several chenna balls. Now prepare sugar syrup by boiling sugar in water. Dip the chenna balls in it. Separately, boil some milk and add sugar, saffron, almonds, and pistachios. Dunk the balls in it for three-four hours and refrigerate.
Chicken and milk stew
Heat butter in a pan and season a whole chicken with salt and pepper. Cook until golden brown. Add sage, milk, garlic cloves, and lemon zest. Once cooked, remove it and roast it in the oven at 190 degrees Celsius. Cut into pieces. Now slice up a baguette, apply garlic butter on the slices, and bake them for five minutes. Serve with chicken stew.
Almond milk thandai
Begin by grinding khus khus, fennel seeds, black peppercorns, green cardamom, roasted watermelon seeds, and nutmeg. In the meantime, boil some milk with saffron strands and sugar to taste. Add the ground powder and mix well. Strain the mixture and refrigerate for a few hours. Before serving chilled, garnish with crushed rose petals.
Kalakand
Begin by cooking ricotta cheese and milk until the excess liquid dries up and you are only left with a wet consistency of the mixture. To this, add some sugar, stir well, and remove from heat. Add rose water and cardamom, and then transfer to a serving dish. Garnish with your favorite nuts like almonds and cashews. Cut into squares and serve.
Kheer
Heat some ghee and vermicelli in a pan. Saute for two minutes on low flame and keep aside. Separately, add some milk and water. Cook on a medium flame for about five minutes. Now add some sugar, followed by the roasted vermicelli, and cook it for 10 minutes. Mix well and refrigerate for a few hours. Serve chilled.
