Keto strawberry cheesecake
Shubham Shirke, Executive Chef at The Pantry, Mumbai, shares his recipe for strawberry cheesecake compliant with the Keto diet. For a 600 gram ring cake, you require 80 grams of blanched almond flour, 60 grams of unsalted butter, 120 grams of erythritol, 360 grams of cream cheese, 30 grams of strawberry, two eggs, 50 grams of hung curd, and 3 grams of vanilla essence.
How to prepare the cheesecake
Beat the cream cheese along with the butter, then add the almond flour and erythritol. Keep the mixture aside. Next, beat the butter separately. Add the eggs and vanilla essence, and hung yogurt to it. Now combine the cream cheese with the eggs and curd mixture. Bake it at 170°C for 30 minutes. Add fresh berries on top and serve.
Strawberry smoothie
The smoothie, prepared by combining strawberry and yogurt, is shared by Harsh Mav, Head of Operations at Stand By Coffee in Mumbai. The ingredients to prepare this smoothie include one cup of Greek yogurt, half a cup strawberry puree (make this by blending fresh strawberries), half cup of milk (use dairy or plant-based milk), one cup of ice cubes, and fresh strawberries for garnish.
Steps to make the smoothie
In a blender, add the Greek yogurt, strawberry puree, milk, and ice cubes. Blend the ingredients until the mixture is smooth and creamy. Add more milk to get the desired consistency. Adjust the sweetness if needed. Add a sweetener of your choice, such as honey or agave syrup. Then pour the smoothie into glasses. Garnish with fresh strawberries on top for an extra flavor.
