Gujarati khaman kadhi recipe: Simple steps to deliciousness
Khaman kadhi is a delectable vegetarian dish hailing from the vibrant state of Gujarat. Gather the following ingredients
You'll need one cup of gram flour (besan), one tablespoon semolina (sooji), one teaspoon lemon juice, one teaspoon Eno fruit salt, a pinch of turmeric powder, salt to taste, water as much required, a cup of yogurt, two tablespoons chickpea flour, a handful of fresh coriander leaves, mustard seeds, cumin seeds, asafoetida (hing), curry leaves, green chilies slit lengthwise, and salt to taste.
Steam the khaman
Begin by mixing gram flour with semolina, turmeric powder, lemon juice, salt, and water to form a smooth batter. Let it rest for a few minutes before adding Eno fruit salt and stirring gently. Pour the batter into a greased steaming tray and steam for 15-20 minutes or until a toothpick inserted comes out clean. Once done, let it cool before cutting into cubes.
Whisk up the kadhi
Whisk together yogurt and chickpea flour until smooth. Add water to reach your desired consistency and bring it to a gentle simmer over low heat. In another pan heat oil; add mustard seeds, and cumin seeds. When they splutter, add asafoetida, curry leaves, and green chilies.
