This Italian-inspired recipe combines the creaminess of risotto with the natural sweetness of the squash, making it a favorite dish for many. It's a great offering to serve during family get-togethers and house parties. Here's the recipe.
Step 1: Gather the following ingredients
Four whole sweet dumpling squashes, three tablespoons olive oil, 1.5 teaspoons salt, two tablespoons unsalted butter, ¼ cup chopped pancetta, one clove garlic, ½ whole yellow onion, ½ whole portobello mushroom, ½ bunch asparagus, 1.5 cups prepared risotto, ¼ teaspoon brown sugar, ¼ teaspoon ground black pepper, one pinch cayenne pepper, one tablespoon heavy cream, ½ cup parmesan cheese, and ¼ cup panko breadcrumbs.
Step 2: Prepare and bake the squash
Preheat your oven to 375 degrees Fahrenheit. Line a baking dish with aluminum foil and coat with nonstick spray. Cut the tops off the squashes and scoop out the seeds. Brush the squash with olive oil and sprinkle with salt. Bake for 35 minutes until fork tender but not mushy. Remove from the oven and set aside.
Step 3: Cook risotto and veggie mixture
The next step is to grab a pot, heat olive oil and butter in it over medium heat. Add pancetta, garlic, and onion, sauteing for a few minutes or until softened. Add mushroom and asparagus, cooking until tender. Stir in prepared risotto, brown sugar, salt, black pepper, cayenne pepper, heavy cream, and shredded Parmesan cheese. Adjust seasonings to taste.
Step 4: Stuff, bake, and serve warm
Once you are done adjusting the taste, divide the risotto mixture evenly between the squashes, packing it inside the centers. Combine the remaining shredded Parmesan cheese with panko breadcrumbs and top each squash. Now, dot with butter and bake for 10-12 minutes until golden brown. Serve warm and enjoy your delightful risotto-stuffed sweet dumpling squash. Don't forget to share this recipe with your tribe!
