Sabudana khichdi
Soak one cup of sabudana or tapioca pearl in water for two to three hours, then drain. Heat one tablespoon of ghee, add one teaspoon of cumin seeds, and let them splutter. Add diced potatoes and cook until tender. Stir in sabudana and one chopped green chili (optional). Cook until translucent, season with salt, and garnish with coriander.
Aloo tamatar ki sabzi
Heat one tablespoon of oil in a pan, add one teaspoon of cumin seeds, and let them splutter. Add two chopped tomatoes and cook until soft. Mix in half a teaspoon each of turmeric powder, cumin powder, coriander powder, and salt. Add three to four cubed potatoes and a little water. Cook until tender, then garnish with fresh coriander leaves.
Lauki kofta
Mix one grated bottle gourd with half a cup of gram flour, half a teaspoon of cumin seeds, half a teaspoon of turmeric, and salt. Form balls and fry in one tablespoon of ghee until golden.
