One-pot dinners are a meal in themselves that usually do not require any other side dishes. These are quick and easy to make and do not require several utensils for preparation which makes them perfect for those who are in a hurry. You just have to mix all the ingredients together in one single pot and voila, your magic dinner is ready to serve.
Tawa pulao
Saute cumin seeds, chopped onion, ginger paste, green chilies, green and red bell peppers, and carrot with butter in a deep pan. Add boiled potatoes, and green peas and mash them. Add tomatoes, tomato sauce, green chili sauce, salt, red chili powder, pav bhaji masala, and cook well. Add rice and mix well. Squeeze some lemon juice and garnish with coriander leaves before serving.
Rajma pulao
Heat ghee in a deep pan. Add cumin, mace, star anise, bay leaf, cinnamon, and cloves, and cook well. Add ginger, onions, green chilies, tomatoes, salt, red chili powder, garam masala, and mix everything well. Add boiled rajma, and water and combine everything. Add rice along with some water, mix everything well and cook for 12-15 minutes. Fluff the rice gently and serve hot.
Coconut rice
This easy-to-make coconut rice recipe is nutritious, healthy, and aromatic. Heat coconut oil in a large pan and saute asafoetida, dried red chili, urad dal, chana dal, curry leaves, mustard seeds, and cashew in it. Add grated coconut and salt, saute well and set aside. Boil some rice in the same bowl. Add the coconut masala and mix everything well. And it's ready!

This one-pot chicken stew recipe makes for a nutritious dinner. Heat oil in a large pot. Add garlic, thyme, and leeks, and cook for 10 minutes. Season the chicken with black pepper and salt and add to the dish with potatoes. Add chicken stock and cook for 35 minutes. Add green beans, and peas and cook again. Squeeze some lemon juice before serving.

Add ghee to a pressure cooker and saute cumin seeds, bay leaf, and asafoetida for 30-40 seconds. Add ginger, onion, green chili, tomato, turmeric, and salt, and cook well. Add carrots, potatoes, cauliflower, and beans and saute for two-three minutes. Add moong dal and saute for three-four minutes. Add rice, water and mix well. Pressure cook for four whistles and serve hot with pickle.
