National Vegetarian Week: 7 recipes for 7 days
A week of vegetarian goodness! The US observes National Vegetarian Week every third week of May each year. It is an initiative by the Vegetarian Society to urge more and more people to adopt a vegetarian lifestyle. So to commemorate this occasion on a flavorsome note, we have curated a list featuring seven recipes for the entire week of May 15 to 21.
Chili paneer frankie
Mix chili powder, coriander powder, black pepper, turmeric, and garam masala in a bowl. Separately, mix maida, whole wheat flour, curd, oil, and salt. Knead into a dough. Make balls of this dough, heat a pan, and make parathas. Make a slurry with cornflour, maida, ginger-garlic paste, and water. Dip paneer in it and fry. Place it on parantha, add veggies, roll, and savor.
Cheesy quinoa nachos
These cheesy quinoa nachos are the perfect snack to enjoy during a game night or sleepover with friends. All you have to do is, place some nachos in a microwave-safe bowl such that they overlap each other. Now spread some jalapeno dip on them, followed by your favorite veggies. Layer it all with cheese and then microwave for two minutes.
Pizza toast
Children can also make a pizza toast, it is that easy. Toast a slice of bread. Then, smear pizza sauce on it and then layer it with shredded cheese. Now add your favorite toppings like tomatoes, onions, capsicum, olives, jalapenos, etc. followed by seasonings like oregano and chili flakes. Place it in an oven and bake it until the cheese melts.
Chili cheese noodles
Begin by boiling noodles. Set them aside once done. Now take a wok and add chili oil to it. Stir fry cabbage and onions until both turn golden brown. Next, add some tomato sauce to it, followed by the boiled noodles. Toss well and then add soy sauce, vinegar, chili garlic paste, and some coriander leaves. Finally, add grated cheese and cook.
Vegetable sandwich
Coarsely chop broccoli, and grill bell peppers, zucchini, squash, and eggplant on all sides evenly. Add olive oil and let the veggies marinate for about 10 minutes. Meanwhile, take a bowl and mix cream cheese, hot sauce, and plum chutney. Grill two slices of bread and smear this cheese mixture on them, followed by the veggie mix and a few leaves of lettuce.
Garlic spaghetti
Boil some spaghetti and add some salt to it. The next step is to heat some garlic butter sauce on medium flame and put the spaghetti. Tossing well for three to four minutes, add chopped green onions and mix then well. Now add some chili oil and stir the spaghetti nicely so that it gets well-coated. Pour it on a plate and serve.
Paneer paratha
Mix whole wheat flour and water to make a dough. Keep it aside. In the meantime, prepare stuffing by mixing grated paneer with green chilies, onion, coriander, salt, and other spices. Now take a small ball of dough, flatten it using a rolling pin, add the stuffing in the center, and seal it from all sides. Cook on a ghee-greased pan on both sides.
