Observed on February 17 every year, National Cabbage Day celebrates the healthy and delightful vegetable that comes packed with vitamin C, protein, fiber, and potassium. It is low in sodium and carbs which makes it perfect for weight loss. Cabbages help improve your digestive health and support your immune system. Here are five cabbage recipes from around the world that you can relish today.

Served during Christmas

Golabki or stuffed cabbage from Poland

Cook cabbage in salted boiling water and peel it off. Fry onions in butter. Add diced mushrooms, and Worcestershire sauce and fry well. Add boiled rice, salt, parsley, pepper, garlic, and paprika, and mix well. Place the rice mixture in each cabbage leaf and roll. Pour tomato juice on top, sprinkle paprika, and bake for 30 minutes. Serve immediately.

Colcannon from Ireland

Peel and chop the potatoes. Add chopped potatoes to water along with salt, and boil. Simmer and cook for 15 minutes. Remove the potatoes. Add scallions and cabbage to the potato water and simmer for one-two minute. Mash the potatoes, add salt and butter, and mix well. Add butter, cabbage, and scallions and mix again. Enjoy the dish with some garlic toast.

Saute onions in butter. Add shredded cabbage, celery, and carrots, and saute well for about three minutes. Add vegetable stock and bay leaf and boil. Simmer the mixture for 15 minutes. Add chopped potatoes, boil, and simmer for 10 minutes. Add chopped tomatoes, salt, and pepper, boil, and simmer for five minutes. Remove the bay leaf. Garnish with dill and sour cream and serve.

Coleslaw from the United States

Coleslaw originated in the Netherlands in the 18th century. Slowly, it gained popularity in the United States and is now an American staple. Mix together mayonnaise, lemon juice, pepper, and salt in a bowl to make the dressing. Add finely grated cabbage and spring onions and mix well. Add chopped cucumber pickles for an extra tang and crunch. Enjoy it with burgers and sandwiches.

Sauerkraut or sour cabbage is the national dish of Germany. It's a dish made of fermented cabbage. Mix together shredded cabbage, caraway seeds, juniper berries, mustard seeds, and pickling salt and let it rest for one-two hour. Sterilize a mason jar, and add the cabbage to it. Pour salted filtered water into it and leave it for one-three weeks to ferment. Serve with sausages.
