    Now, let's embark on the journey of creating this sumptuous chowder.

    Ingredients list 

    Gather the following ingredients

    For this delightful chowder, assemble two tablespoons of olive oil, one diced onion, and two minced garlic cloves.

    Include three cups of vegetable broth, four cups of sweet corn kernels, one diced red bell pepper, and one cup of diced potatoes.

    Season with one teaspoon of paprika, salt, and pepper to taste.

    Finally, one cup of coconut milk is needed for creaminess.

    Step 1

    Prepare the vegetables

    Begin by heating the olive oil in a large pot over medium heat.

    Add the diced onion and minced garlic cloves to the pot.

    Saute them until the onions become translucent and aromatic.

    This should take about five minutes.

    Be careful not to let them brown too much as it can alter the flavor profile of your chowder.

    Step 2

    Simmer the chowder

    Stir in the vegetable broth along with the diced potatoes and red bell pepper.

    Bring the mixture to a boil before reducing the heat to let it simmer gently.

    Cover the pot and cook until the potatoes are tender; this usually takes about 15 minutes.

    The potatoes will add thickness to your chowder as they soften.

    Step 3

    Blend for creaminess

    Once the potatoes are soft, add two cups of sweet corn kernels to the pot.

    Use an immersion blender to partially blend the soup directly in the pot until you achieve a creamy yet chunky texture.

    If you don't have an immersion blender, carefully transfer some soup into a blender, process it until smooth, and then mix it back into the pot.

    Step 4

    Final touches

    Add in the remaining two cups of corn kernels along with paprika, salt, and pepper for seasoning.

    Pour in one cup of coconut milk for that creamy consistency while keeping it plant-based.

    Allow everything to cook together for another five minutes so that all flavors meld beautifully.

    Taste and adjust seasoning if necessary before serving hot.
