Well, we are talking about lassi and chaas, which are often confused with one other. Here's the difference.
Technique: Lassi is yogurt and water, chaas is separated butter
Lassi is made by combining yogurt with water and then adding ingredients like salt, sugar, or fruits. On the other hand, chaas which is called buttermilk in English is made by churning off the butter from milk. While the former is more popular in North India, the latter is believed to be more frequently made in the western region of the country.
Flavor: Lassi is usually sweet, chaas is typically savory
Both lassi and chaas taste refreshing, however, they differ in taste. The former refers to a concoction that comes in two types: one that is purely sweet (like mango and strawberry variants) and another that combines sweet and salty flavors (such as mint). On the other hand, the chaas exclusively offers a salty taste due to the inclusion of masalas and various herbs.
Texture: Lassi is thicker than chaas
Texture and consistency are one of the most evident differences between the two popular summer coolers. Lassi has a more dense consistency and is thick in appearance. It is more creamy owing to the use of yogurt. On the other hand, chaas is thin and its consistency is more translucent. It has very low to no creaminess at all.
