Vegan burger
Cook sweet potatoes for about 20 minutes. Drain and keep aside. Mash the sweet potatoes, cooked kidney beans, onion, and garlic until it comes together. Add in salt, black pepper, cumin, paprika, and cayenne. Add cooked quinoa and combine. Give the shape of patties and cook them in hot oil. Place on a burger bun, add lettuce, tomatoes, mayonnaise, mustard sauce, and enjoy.
Potato cheese balls
Make dough with mashed boiled potatoes, bread crumbs, chili flakes, salt and pepper, ginger-garlic paste, and coriander leaves. Then make smaller balls. Season cheese cubes with Italian herbs, chili flakes, and pepper. Flatten the potato balls and add a cheese cube in the center and cover it evenly. Roll the balls in cornflour slurry, coat with bread crumbs, and deep fry.
French fries
Cut the potatoes in the shape of fries, boil with some vinegar and salt until fully tender. Drain and dry. Heat oil in a large wok and add the fries. Cook for 50 seconds, and remove to a paper towel-lined sheet. Allow potatoes to cool to room temperature. Fry them again for about 3.5 minutes. Season with kosher salt and enjoy with ketchup.
Bhel puri
In a large bowl add puffed rice, chopped onion, tomatoes, green chilies, boiled potato, coriander leaves, and roasted peanuts. Give it a nice toss. Over this add tamarind chutney and mint chutney and mix well. Crush a few papdi and add to the bowl. Add a few tablespoons of sev to this and mix well until properly incorporated.
Fudge brownie
Melt butter and chocolate in a pan. Stir in the cocoa, sugar, and vanilla and remove from the heat. Add eggs, flour, baking powder, salt and whisk until smooth. Add some walnuts. Pour the batter into a greased baking pan in an even layer. Bake for 20 to 25 minutes. Insert a fork, and if it comes out clean, the brownies are done.
