Main ingredients (for serving 6 to 8 portions)
Prepare this mouthwatering dessert by blending the listed ingredients for a delightful treat. The main component is one liter of full-fat milk for a creamy base with 800 grams of custard apple or sitaphal to infuse natural sweetness and tropical flavors. To complement the fruity notes, 50 grams of sugar are added, enhancing the sweetness without overpowering the custard apple's natural taste.
Ingredients to garnish
Keep aside a little (about 3 grams) green cardamom powder (elaichi), which gives it a mesmerizing aroma and enhances the flavors. A tiny amount of saffron gives the dessert a beautiful golden color. Finally, take a good amount (about 15 grams) of almond flakes to sprinkle over the dessert. It adds a nutty taste that goes perfectly with the creamy sitaphal kheer.
Prepare the base
Gently tear each sitaphal in half and scoop out the pulp using a spoon, and remove the seeds. Set aside the pulp, which should be around 425 to 450 grams. In a thick-bottomed pan, boil the full-fat milk. Add sugar and let the milk simmer over low heat for about 18 to 20 minutes until it thickens and reduces to half its original volume.
Add Sitaphal and prepare the kheer
Next, add the sitaphal flakes and pulp, along with the green cardamom powder and a pinch of saffron. Cook the mixture over low heat for another five to seven minutes to blend and infuse the flavors. Turn off the flame and transfer the kheer to a serving bowl. For the best taste, refrigerate the kheer for approximately 60 to 75 minutes.
