Panna cotta
Boil water. Add gelatine to it and stir well. Add cream to a pan along with fresh vanilla pod and sugar and mix well. Add the gelatine and mix again. Take out the vanilla pod. Once cool, pour it into the mold. Refrigerate and de-mold. Saute together cranberries, strawberries, raspberries, sugar, and balsamic vinegar in a pan. Serve this sauce with the panna cotta.
Tiramisu
Beat sugar and egg yolks. Beat cream cheese and fold in the egg and sugar mixture to combine everything well. Beat egg whites and fold them into the mixture. Dip sponge cake strips in coffee and layer them on the dish. Spread the cream mixture, then the cake strips, followed by more cream mixture. Refrigerate for six hours, dust cocoa powder, and serve.
Zabaione with strawberry sauce
Whip egg whites. Add sugar and whisk well. Fold in egg yolks and flour. Spread the mixture on a greased and floured baking sheet. Sprinkle with cocoa powder and bake for 10-12 minutes. Spoon strawberry puree-sugar mixture on a plate. Top with the sponge round and add one orange slice on top. Heat egg yolks, sugar, and orange juice. Spoon over the orange slice.
Baba
Mix together yeast, milk, and flour. Add flour, yeast mixture, sugar, and eggs to a bowl and blend the mix. Add butter and salt and blend the mixture again. Let the dough rise for three hours. Heat lemon zest, sugar, rum, and orange zest. Bake the dough for 30-35 minutes in separate molds. Dip each baba into the syrup, refrigerate, and serve.
Vanilla milk gelato
Sprinkle gelatine on a cup of milk and keep aside. Heat the rest of the milk and sugar and boil the mixture. Add the gelatine mixture, boil, and then simmer. Transfer to a container with a tight lid. Freeze the mixture and whip it up with a hand beater. Place back into the freezer, then whip again. Freeze again, and serve chilled.
