Indians cannot do without their evening cup of chai and no tea time is complete without some hot, crispy snacks that will make your day. Apart from popular litti chokha, chandrakala, sattu and malpua, Bihar is also well-known for its delectable snacks that reflect the state's food culture. Here are five famous snack recipes from Bihar that you must try at least once.
Bachka
Soak kala chana in water for four-five hours and pressure cook with salt. Mix besan, water, and salt in a bowl. Saute cumin seeds, ginger-garlic paste, turmeric powder, green chili, garam masala, and red chili powder in mustard oil. Add to the besan batter and mix well. Add kala chana, and onions and mix again. Fry spoonfuls of the batter in oil. Serve hot.
Thekua
One of Bihar's most loved sweet snack items, thekua is specially made during the time of Chhath puja. Boil some water. Add sugar to it and mix well. Add ghee and stir again. Mix wheat flour, fennel seeds, cardamom powder, and grated coconut and knead into a dough. Make small balls out of the dough and deep fry them in hot oil.
Kale chane ki ghugni
Cook soaked chickpeas with turmeric powder. Grind sliced onions along with cooked chickpeas. Saute cumin seeds, bay leaves, ginger-garlic paste, and green chilies in oil. Add coriander powder, pepper powder, roasted cumin powder, red chili powder, turmeric powder, and ground onion-chickpea paste and cook well. Add remaining cooked chickpeas, salt, and water, simmer and cook. Garnish with onions and green chilies and serve hot.
Bihari kebab
Mix together curd, ginger-garlic paste, red chili powder, mustard oil, onion paste, garam masala powder, and poppy seed paste in a bowl. Add boneless chicken pieces and marinate for two-three hours. Add marinated pieces in hot oil. Brush some butter on top of the chicken pieces. Transfer the pieces to absorbent paper and serve hot with mint chutney.
Dal pitha
These wheat flour dumplings stuffed with chana dal are a must-try snack from Bihar. Soak chana dal in water for three-four hours and grind it into a smooth paste. Mix wheat flour with water and knead it into a smooth dough. Divide into portions and fill mixed dal paste in each of them. Roll into the shape of gujiyas and microwave for two-three minutes.
