Fennel rice
Saute onions in an olive oil-greased pan for five minutes. Add garlic and stir well for 30 seconds. Add fennel seeds and salt and stir again for eight minutes. Add rinsed basmati rice, water, salt, parsley, dill, and pepper, and boil. Cover and simmer for 20 minutes. Let it sit for 10 minutes. Drizzle olive oil on top, mix well, and serve hot.
Fennel and honey cake
Toast fennel seeds in a saucepan and let them cool. Mix the seeds with lemon zest, butter and sugar and whisk for two-three minutes. Add eggs, milk, baking powder, salt, and flour and mix well. Add grated fennel and stir. Bake the batter for one hour. Mix honey, butter, powdered sugar, and cream cheese, and top the cake with this icing.
Fennel pancakes
Pound cardamom pods in a mortar. Grind fennel seeds into powder form. Mix fennel powder, cardamom, flour, semolina, milk, baking powder, and caster sugar for the batter. Cook orange juice, caster sugar, and water and simmer for three-four minutes. In another bowl, whisk ricotta cheese, sugar, and orange zest. Cook the pancake batter in ghee. Smear paneer cubes with salt. Mix fennel seed powder with a little water to make a paste. Saute paneer pieces in an oil-greased pan and keep aside. Add bay leaves and fennel seeds to the same pan and stir. Add ginger paste, green chilies, salt, and fennel seed paste and mix. Add green peas, fried paneer, sugar, and warm milk. Cook well and serve.

Boil full cream milk. Add drained rice and stir well. Add sugar, fennel seeds, fennel powder, and chopped nuts, and cook for five-eight minutes. Serve warm.
