Make these delectable dishes using chaas or buttermilk
Chaas or buttermilk is a refreshing fix to one's summer season woes, for it is made with ingredients that make it the perfect cooler to consume on a hot day. However, did you know that it could also be used to prepare some lip-smacking dishes that score high on flavor and appeal? Check out these five buttermilk-based recipes you can easily prepare at home.
Buttermilk scones
Mix flour, baking soda, castor sugar, butter, and cream of tartar. As you mix, add buttermilk and form a dough. Now sprinkle some flour on a dough board and pat the dough to thicken it as desired. Using a cookie cutter, cut small rounds and bake them at 220 degrees Celsius for 10-12 minutes. Top with whipped cream and serve fresh.
Pulissery
Blend garlic, grated coconut, cumin seeds, onions, and green chilies into a fine paste. Separately, add some water, sliced ash gourd, and cucumber pieces. Cook on low flame. When the ash gourd is cooked, add the paste and buttermilk to it. Simmer on low flame. Prepare the tempering by adding fenugreek and mustard seeds in oil and sauteing them. Add to the curry.
Kalan Kerala curry
Begin by cooking yam and bananas in a mixture of turmeric and buttermilk. Cook till the yam softens. Sprinkle some salt and grated coconut. Cook for a few more minutes. Meanwhile, heat some coconut oil in a pan and add some curry leaves and mustard seeds to it. Add the buttermilk mixture, followed by fenugreek seeds and some black pepper. Garnish with curry leaves.
Handvo
Add buttermilk, baking soda, salt, and flour in a vessel. Mix well and let it stay untouched for seven hours or so. Then, add grated bottle gourd, green chilies, and coriander. Separately, heat some oil in a pan and urad dal, channa dal, cumin seeds, and mustard seeds. Pour the batter in it, remove it from the heat, and then bake. Serve hot.
Berry buttermilk ice cream
Whisk 1.5 cups of heavy cream, 1.5 cups of buttermilk, 1/4 cup of maple syrup, and 3/4 cup of brown sugar in a bowl. Mix well. Pour this mixture into an ice cream maker and churn until soft. It may take you about 15 minutes. Now add some frozen berries to it, churn again until they mix well, and freeze until softly set.
