Beat the heat with a dish so sweet! Rabri is one of the most popular desserts in North India which is best enjoyed for its creaminess. From milk to various spices like cardamom, saffron, and nuts, a lot goes into the making of this flavorsome treat. Today, let us try these five lip-smacking rabri recipes that will make your #summerdiaries merrier than ever.
Rose rabri
Heat some milk in a pan till it reduces to half. Once it happens, crush some saffron strands and add to it and let it cook on low heat for five minutes. Now add almonds, pistachio, and cardamom powder, and mix all the ingredients well. Cook for two minutes, add rose water, mix well, and let it cool at room temperature. Refrigerate and serve.
Banana rabri
Add about 100 ml of milk along with some mashed bananas in a pan. Mix well. Add it to a pan and boil it till it reduces to half of its quantity. This should take 10 minutes. Keep stirring it and then add cardamom powder, followed by stevia to make it sweet. Allow it to cool down at room temperature and then refrigerate it.
Mango rabri
Boil some milk and then simmer it once it reduces to half of its quantity. Add sugar and allow it to dissolve as you cook more. Chop your favorite nuts and add to the milk. Also add cardamom, saffron, and mango puree. Mix well, turn off the heat, and cool down at room temperature. Refrigerate, garnish with chopped mangoes, and serve chilled.
Apple rabri
Start boiling some milk and keep doing so till it reaches half of its quantity. To this, add sugar and grated apples, and cook over low flame for a few minutes. Now add some chopped almonds, saffron strands, cashews, and cardamom powder, and mix everything well as you cook. Remove from heat, let it cool down, and then refrigerate.
Strawberry rabri
Boil some milk until it reduces to half. In the meantime, add three tablespoons of cornstarch in some water and make a slurry. Add this to the milk along with sugar and cook for five minutes or until the sugar gets dissolved. Remove from heat and let it cool. Now add strawberry puree and chopped strawberries. Refrigerate and serve chilled.
