Jeweled pilaf (Persian rice pilaf)
Whisk olive oil, vinegar, cumin, cinnamon and coriander powder, orange juice, zest, lemon juice, salt, pepper, and maple syrup together and keep aside. Heat oil in a pan and add scallions, garlic, and cook until soft. Add salt and pepper. Add the cooked rice, and gently mix. Turn off heat and add the dressing. Sprinkle pomegranates, pistachios, parsley, mint leaves, and roasted chickpeas.
Nasi Uduk (Indonesian coconut rice)
Place rice, coconut milk, water, galangal, ginger, coriander powder, lemongrass, bay leaves, pandan leaves, and salt in a rice cooker pot and cook until ready. After 10 minutes, remove the lid and take out lemongrass, pandan, bay leaves, ginger, and galangal. Stir with the rice cooker paddle. Shape the rice using a bowl, and serve with fried chicken, fried tempeh, and rolled fried eggs.
Arroz Rojo (Mexican tomato rice)
Add rice in hot vegetable oil and toast for three minutes. Puree a large tomato, half an onion, one garlic clove, and salt in a blender. Add to the rice and cook, until almost dry. Add three cups chicken broth and chopped coriander leaves and boil. Cook on low flame and let the liquid get absorbed. Rest it covered for 10 minutes before serving.
Bibimbap (Korean mixed rice)
Mix cucumber pieces with gochujang (red chili pepper paste) in a bowl; set aside. Cook spinach, drain and mix soy sauce. Cook carrots, add garlic, add the cucumber then sprinkle red chili flakes and set aside. Cook diced chicken. Fry an egg until firm. Assemble rice in a bowl, add spinach, chicken, cucumber, carrots, on top, and place the fried egg. Sprinkle sesame seeds.
Casamiento Salvadoreño (El Salvadoran rice and beans)
Heat oil in a pan and sauté onions and capsicum in it. Then add cooked rice, roast for a minute and add cooked kidney beans and mix well without breaking the rice. Add chicken bouillon (dehydrated chicken stock), salt, and pepper to taste. Stir continuously until the liquid evaporates. Serve hot, with fried eggs, banana chips, avocado, and cheese.
