One of the most perfect appetizers to serve at parties and get-togethers, spring rolls are deep-fried crispy, and filling treats that are part of Chinese and Southeast Asian cuisines. Usually stuffed with flavorful veggies, or meat, these crunchy wrapped rolls are light and refreshing. You can also make fusion varieties with chocolates or fruits. Here are five delectable spring roll recipes to try.
Sooji spring roll
Mix together semolina, yogurt, salt, and water to form a smooth batter. Cover and keep aside. Mash boiled potatoes. Add chaat masala, salt, coriander powder, coriander leaves, red chili powder, and garam masala, and mix well. Saute onions, green chilies, ginger, carrots, and capsicum in oil. Add mashed potato mixture and mix. Cook the batter to make wraps. Add the stuffing, roll, and serve.
Vegetable spring roll
For the pancake batter, mix together flour, salt, water, milk, and eggs. Cook the pancakes in oil. Stir-fry garlic and onions in oil. Add shredded cabbage, spring onions, carrot, salt, garlic, celery, and soya sauce, and mix well. Take a pancake, add the filling inside, and roll, sealing the edge with flour-water paste. Dry roast whole black peppercorns and grind them into a smooth powder. Saute finely chopped onions in oil. Add ginger-garlic paste and stir well. Saute cumin seeds, asafoetida, and sesame seeds in an oil-greased pan. Add paneer, sweetcorn, and green peas, and saute well. Add black pepper, lemon juice, and chili powder, and cook well. Add salt, spring onions, and coriander and mix well. Add this filling to spring roll pastry sheets. Fold and roll the spring rolls and deep fry them. Serve with tamarind chutney.

This chocolatey spring roll offers a unique twist to the original recipe. You can serve it as a dessert after a satisfying meal. Break a dark chocolate bar into small pieces. Add two chocolate pieces to a spring roll sheet, roll, and seal the edges with water. Refrigerate the rolls and then deep fry them. Garnish with chocolate sauce and vanilla ice cream.
