A popular leavened Indian flatbread from Amritsar in Punjab, kulcha is usually made with maida or refined white flour and is served with spicy Amritsari chana masala. It can be either plain or stuffed with a filling of veggies, paneer, or even meat. Kulchas have a super soft and chewy texture. Here are five delicious kulcha recipes to try at home.
Onion kulcha
Combine maida, baking soda, baking powder, salt, and water. After two hours of resting, divide the dough into equal parts and make small round balls. For stuffing, mix chopped onions, coriander, mint leaves, green chilies, salt, and carom seeds. Add it to the center of each flattened ball; fold and seal the dough. Roll out kulchas and cook on a tawa or skillet. Enjoy!
Amritsari kulcha
Mix refined flour, salt, and water for a firm dough. Cover it with a moist cloth. For the stuffing, mix chopped onion, mashed potatoes, coriander seeds, ginger, coriander sprigs, green chili, dried pomegranate seeds, salt, and lemon juice. Make small balls from the dough, add the filling, seal edges, and roll them out. Cook them in a pan with oil. Serve with coriander-mint chutney.
Paneer aloo kulcha
Combine maida, salt, milk, sugar, and curd into a soft dough. For the filling, mix grated paneer, ginger, garlic, coriander leaves, mashed boiled potatoes, chili powder, salt, cumin powder, onion, and chaat masala. Male small balls out of the dough and roll them. Add the filling and roll again. Brush the kulchas with milk-butter mix, sprinkle onions and coriander, and cook well. Serve hot.
Beetroot kulcha
Mix beetroot with sugar and onion and blend well. Add yogurt, flour, baking powder, baking soda, oil, salt, and coriander leaves and blend again. Add water and knead the mixture into a soft dough. Let it sit for 30 minutes. Divide the dough into small-sized balls and roll them out. Cook them in oil, top them with butter, and serve hot with curd.
Avocado and spinach kulcha
Mix chopped garlic, chopped spinach, salt, baking soda, red chili flakes, garlic, mashed avocado, carom seeds, green chilies, and yogurt. Add all-purpose flour and oil and knead into a smooth dough. Make small balls out of the dough, add sesame seeds, grated garlic, and coriander leaves, press the toppings, and roll them out. Dry roast kulchas first, apply some ghee, and serve hot.
